1 onion, chopped
2 carrots, grated
1 lg or 3 sm zucchinis, grated
2 cups diced mushrooms
1T crushed garlic
125g or so of diced bacon
6 x 425g cans of baked beans, any flavour
2 x 400g cans diced tomatoes
Vegies and bacon cooking away
Add all the beans and tomatoes and allow to simmer for 10 mins until heated through and the flavours have combined. Can cook this longer or even pop in the slow cooker or thermal cooker too.
Season to taste.
Makes a massive pot full. The pot above was full to the brim once everything was added.
You can use whatever veg you prefer or have on hand. Add curry or chilli for spice. Any flavour baked beans can be used. This time round I used 2 cans each of tomato, barbecue and ham.
Bacon can be omitted for vegetarians or alternatively you can slice up cocktail franks and add too.
We love to serve this on some nice thick sliced toast and pop a dry fried or poached runny egg on top. The gooey egg yolk running through the tomato based sauce is soooo yummy!!!
Delicious as a baked potato topping too.
