Menu Planning Mondays Link Up!

This week is a fairly relaxed week with my menu plan. Brian's working nights mostly so I plan easy stuff to cook and also things that I know the kids will eat. Makes life easier on me plus the boys are always out of sorts without Daddy home as much.

Mon ~ Pastitsio
Tues ~ Leftover Pastitsio
Wed ~ Sausages in gravy with chips
Thurs ~ Meatball subs
Fri ~ Chicken snitzels with creamy mushroom sauce and vegies
Sun ~ Leftovers

Baking:
I have been experimenting with some new recipes for a Bake from Scratch series I hope to run soon. This week I made an awesome new chocolate cake recipe that I know you are going to love!
Herman was ready this week too. We have plenty of muffins in the freezer so I took advantage of some fruit and veg that needed using. I made Zucchini, Sultana, Walnut and Cinnamon loaf x2, and a Pear, Strawberry and Vanilla loaf x2 that I tried a streusel topping on that didn't work out as well as planned but is still yummy.

My Crafty Corner: Jellywares Yarn Club

I've always admired the yarns that Jodie from Jellywares uses and sells. Thinking that one day I'll get around to ordering some for a special project. But we all know how long that project list is right?

Then Jodie came up with this fabulous idea for a Yarn Club!
You subscribe to seasonal subscriptions for either a crochet or knit version and she'll send you a beautiful package at the start of each month for the season (3 months). How awesome!

So I've signed up for the crochet version, of course and waited excitedly for my first package arrived.
Jodie teased us with little sneak peaks here and there which just whet the appetite even more!

The day finally came, and OMG the package was just awesome!

We received a beautiful skein of Sierra cotton/wool blend yarn in a gorgeous shade of dark purple, a hand printed calico project bag in the perfect size for a small project, some little heart shaped shortbreads, perfect to have with a cuppa while we hooked away, a little leaf accessory that Jodie knitted for each of us, plus a lovely letter and pattern on nice thick cardstock.
Eli just loved the packaging and took it to kindy to create with too.

The pattern was for a dishcloth, and you know how I LOVE dishcloths.

This time for a new to me pattern called Tulip Stitch Dishcloth by Toni in the Foothills of the Great Smokey Mountains. You can find the pattern here on Ravelry.
It's such an easy pattern that hooks up quite quickly, making it perfect for gift giving.
Even though this was a new pattern it still only took me an hour to complete.

We only used less than half the skein too. I was tempted to make a second but I'm going to hold off for now and see how much yarn we have leftover from the other projects and I might make something combining them all :)

I can't wait for next months subscription to arrive. I hear it might just contain some hand dyed yarn!

Tucker Tuesday: Recipe ~ Lemon Delicious

 Now that the weather is cooling down we are starting to feel like hot puddings again.
I really wanted to make something to have with the roast chicken on Sunday, but oh what to make?
Well I have lemons here in the fruit bowl that are looking a little worse for wear and some cream in the fridge that's getting close to it's use by date so.......

Lemon Delicious it is!!!!

This is a rather frugal dessert. Especially if you have your own lemons and eggs!
It's a great recipe to practice your baking skills and fabulous for our young bakers to learn lots of skills. There is measuring, separating of eggs, creaming, whipping egg whites and folding all in the one recipe. But it really is a super easy dessert!

Lemon Delicious
60g butter
3/4C sugar
3 eggs, separated
1t grated lemon rind
1/3C Self Raising Flour
1/4C lemon juice
3/4C milk
Icing sugar to dust

Preheat oven to 180C and grease a 1Ltr casserole dish.
Cream the butter, sugar, eggs yolks and lemon rind in a small bowl until light and creamy.
Transfer to a larger bowl.
Add the flour and mix in with a wooden spoon until just combined.
Add the lemon juice and milk and stir, be gentle.
Beat the egg whites in a clean bowl until stiff peaks form.
Gently fold the whipped egg whites into the creamed mixture.
Ensure mix is well combine being careful not to beat the air out of the egg whites.
Bake for about 30 mins or until lightly browned, mix will be a bit wobbly on the bottom.
Dust with icing sugar to serve

We make a double mix of this for our family and serve with fresh cream.

Menu Planning Mondays Link Up!

Lately when I have been making spaghetti bolognaise I have been making a double batch of sauce and freezing the leftovers. So this week I grabbed one of those out of the freezer which meant a super easy dinner as all I had to do was heat the sauce and cook the pasta!

Mon ~ Roast Turkey and veg
Tues ~ Apricot Chicken and veg
Wed ~ Spaghetti Bolognaise
Thurs ~ Crumbed fish and veg
Fri ~ Fried Rice and Marinated Chicken Wings
Sat ~ Chicken Parmys and veg
Sun ~ Roast Pork and veg

Baking:
~ 2 sourdough carrot and walnut loaves
~ sourdough jam scrolls
~ Apple pie slice

My Crafty Corner: Mini Daisy Square Cushion Cover

This week I have been creating a new cushion cover for Lime Tree Creations.

I was inspired by the blanket I am making for Madiba Day.
The colours are just gorgeous so I had to use them again.
I am using Bendigo Woollen Mills 100% cotton in Pomegranate, Blush, Pink Rose, Honeydew, Light Teal, Daffodil, Wild Lavender and Snow.
Can't wait to get this finished over the next couple of days.

Tucker Tuesday: Recipe ~ Sourdough {Herman} Sweet and Savoury Scrolls

One of my boys favourite snack is scrolls. They love both sweet and savoury.
So I looked for a recipe to make Herman into a dough for scrolls.
I honestly can't remember where I found this one, but as usual I always tweak mine a little.

When Herman is ready I remove the good one cup of starter to keep going then I divided the remaining into two. Approximately 2 cups of starter in each batch. Each batch bakes 12 good sized scrolls.
The dough is a little sweet from the last feed but we didn't mind that.

Scrolls
2 cups starter
2/3C butter, melted
1/4C milk
2eggs
3C self raising flour
1/2t salt.

Combine all this in a bowl.
Turn out onto a lightly floured board and then knead in up to 2C more of self raising flour. Your dough will take more or less depending on how much Herman you ended up with and also on the flour itself.
Roll out the dough into a rectangle, spread with your chosen fillings, roll up along the long side.
Cut into 12 equal pieces.
Place in a greased dish and bake at 180C for about 40 mins or until lightly browned.

I decided to use up all the dregs of jam in the bottom of a heap of jars, mixed them together and spread on one batch.
These are just divine served with whipped cream on top, just like a devonshire tea!

The other I spread with pasta sauce, sprinkled with grated cheese, shredded ham and pineapple pieces for pizza scrolls.
You can use whatever you like for the filling though.
